Fabulous Carrot Cake Jam

If you have pears, you should make this jam! It is wonderful, and on a slice of wheat toast with a little butter, it is like eating a piece of Carrot Cake.

1 1/2 C finely grated peeled carrots
1 1/2 C chopped cored peeled pears
1 3/4 C canned pineapple, including juice
3 T lemon juice
1 t ground cinnamon
1/2 t ground tutmeg
1/2 t ground cloves
1 package powdered pectin
6 1/2 sugar

Combine carrots, pears, pinapple with juice and spices in a large sauce pan. Bring to a boil over high heat, stirring frequently. Reduce heat and boil gently for 20 min. stirring occasionally.
Remove from heat, whisk in pectin. Bring to a boil over high heat, stirring frequently. Add sugar all at once and return to a full rolling boil, stirring constantly. Boil hard stirring constantly for 1 min.
